    Easy Baked Chicken Breasts

    This is my go-to super easy, baked chicken breast recipe.  There are endless recipes to be made with these chicken breasts, including Classic Back to Basics Chicken Soup, but so many more!

    Try these chicken breasts as part of a meal, to make chicken salad, many Mexican dishes – you get the idea!

    How To Make Baked Chicken Breasts:

    1 – Prepare a baking sheet with parchment paper.  Wash and dry your chicken.  I like to pat the chicken breasts dry with a paper towel.

    2 – Next, rub the chicken breasts with olive oil, some salt and pepper, and chopped parsley.  Bake until a thermometer reaches 165 degrees.  Serve with your meal or let cool to shred.

    3 – Be sure to season both sides of the chicken breasts.

    4 – Bake until a thermometer reaches 165 degrees.  Serve with your meal or let cool to shred.

    5 – Once out of the oven, place a piece of aluminum foil over the breasts for about 10 minutes.  This allows the juices to redistribute and avoids dry meat.

    6- Serve with your meal or let cool to shred.

    Tips and Techniques:

    • I often make extra to shred and freeze.  Then when I need it for a recipe, it is available at a moment’s notice, which on some days comes in very handy.
    • These are simple baked chicken breasts.  You could add some chopped fresh herbs (or dried) for additional flavor.  Thyme, rosemary and sage are classic poultry seasoning and work great with these chicken breasts.

    FAQ’s:

    1. How long does it take to roast a chicken breast?  Baking time varies depending on the size (weight) of the chicken breasts. Roast until internal temperature reaches 165 degrees.
    2. Should I cover my chicken when I bake? It’s not necessary for this recipe but can help to produce a moister chicken breast.
    3. How do you keep chicken moist when roasting?  Coating the chicken breast with olive oil helps to keep the chicken moist as well as keeping the seasoning adhered to chicken.
    4. Do you put water in the pan when baking chicken?  Sometimes I add about a cup of water or chicken broth to the pan especially if I’d like to make gravy as the water helps the pan drippings from sticking and burning.

    Here is an easy recipe for roasted chicken breasts (bone and skin on). You can use these breasts to eat as is or use the meat for other recipes.

    Ingredients
    • 2 chicken breasts bone and skin on, preferably organic
    • Extra Virgin Olive Oil
    • Sea Salt and Pepper
    • Chopped Parsley - optional
    Instructions
    1. Preheat oven to 375 degrees F.
    2. Wash the chicken breasts and pat dry with a paper towel.

    3. Place in a baking pan. (I like to line the baking pan with parchment paper. You could also spray with oil.)
    4. Rub the chicken with olive oil (approximately 2 tablespoons, depending on the size of chicken)

    5. Season chicken by rubbing sea salt and pepper on both sides.
    6. Bake until the skin has browned and internal temperature reaches 165 degrees. Baking time varies depending on the size of chicken breasts, but 45 minutes is what mine usually takes.
