    The BEST Waldorf Chicken Salad (Paleo, Whole30)!

    A delicious and healthy Waldorf chicken salad that is simple to make!  This classic salad is made with chicken, grapes, walnuts, celery, apples, lemon juice, and mayonnaise.

    Whole30, Paleo, dairy-free – it’s the perfect salad for a casual lunch or a potluck for social gatherings.

    How To Make Waldorf Chicken Salad:

    Step 1 – Bake the chicken.  I usually do this a day ahead by making my baked chicken breast recipe.  Once cooled, I remove the meat and cut it into cubes, and store it in an airtight container in the refrigerator for the following day.  I do the same thing by making the mayonnaise ahead (several links further down the post).  You could use your favorite mayonnaise for this recipe (Paleo, Whole30, or other).

    Tip – Meal prep by making a few extra baked chicken breasts, remove meat, store in zip-lock type plastic bags in the freezer for easy access, and quick meals.

    Step 2- Making the salad – gather and measure the ingredients.

    Step 3 – Add all the ingredients to a mixing bowl except the mayonnaise and lemon juice.

    Step 4 – Toss the ingredients in the mixing bowl and then add the lemon juice and mayonnaise.  Stir to blend well.

    Tip:  Use a mixing bowl (which tends to get a little messy) to combine and then transfer to a serving dish.

    Step 5 – Transfer to a serving dish.  Garnish with some chopped walnuts, chopped parsley.  Delicious served on chopped lettuce or greens of choice.

    Tips When Making This Waldorf Chicken Salad:

    • May substitute pecans or cashews for the walnuts
    • Meal prep by making a few extra baked chicken breasts, remove meat, store in zip-lock type plastic bags in the freezer for easy access and quick meals (like this one).
    • I use this homemade Paleo mayonnaise recipe.
    • Try adding dried cranberries, or raisins.
    • May add a few tablespoons of diced red onion.
    • Use a mixing bowl (which tends to get a little messy) to combine and then transfer to a serving dish.
    • You could boil a chicken breast instead of using baked.

    Ingredients
    • 2 1/4 cups chicken, diced (approximately 1 baked chicken breast)
    • 1/4 cups walnuts, chopped
    • 1/3 cup seedless red grapes, sliced in half
    • 1/2 medium Gala apple, sliced into small cubes
    • 1/2 cup celery, diced into small pieces
    • 1/4 cup mayonnaise (Whole30 compliant)
    • 2 Tablespoons lemon juice (approximately one lemon juiced)
    • sea salt (to taste)
    • ground pepper (to taste)
    • 1 cup lettuce (for serving)
    Instructions
    1. To a large mixing bowl, add the diced chicken, walnuts, grapes, apple, celery and mix together.

    2. Add the mayonnaise, lemon juice to the mixing bowl and mix in with the chicken mixture.

    3. Add salt and pepper to taste.  Ready to serve or place in the refrigerator until ready to serve.

    4. Can be kept stored in the refrigerator for a few days.
