There are quite a few gluten-free stuffing mixes out there, but I prefer to make my own with this quick and easy recipe.
Funny thing is, the gluten eaters in my family gobble this stuffing up because it’s so authentic tasting.
You want your stuffing moist (which this is!), not dry and definitely not soggy. That’s why I love this stuffing recipe.
Simply store leftovers in the refrigerator and reheat as you desire.
How do you make gluten-free stuffing from scratch?
Step 1: Gather and measure the ingredients (see below).
- You can use any gluten-free bread that you like that is not flimsy and is fairly sturdy. I’ve used Schar white bread.
- I used organic low-sodium chicken broth, but you could use any chicken or vegetable broth.
- Since fresh herbs were available, I used those and they come in a convenient poultry seasoning package.
Step 2: Preheat oven to 350 degrees F.
Tip: Chop the onion and celery in a fine dice, mince the garlic, whisk the eggs, chop the herbs as seen below. It makes preparing this recipe infinitely easier if all the ingredients are measured and ready to go.
Slice and chop the bread into cubes as shown below.
Add the bread cubes to a large bowl. Set aside.
Final Steps:
- Heat a skillet or saucepan over medium-low heat.
- To the skillet, add the celery, onions and saute for about 5-7 minutes until fragrant, softened and the onion is translucent.
- Add the herbs, salt, and garlic and saute for another minute. Turn off the heat.
- Add the celery onion mixture to the breadcrumbs in the large bowl.
- Add the whisked eggs and the chicken broth and mix everything gently with a spoon. This may take a few minutes to really coat the bread cubes.
- Lightly coat a casserole dish with oil. You can use an oil spray or just put about a tablespoon of oil in the casserole dish and use a cooking brush to spread around and coat the whole dish.
- Pour the stuffing mixture into the casserole dish and spread to smooth the top.
Oven Instructions:
- Bake for 50-60 minutes until the top is lightly browned and crispy.
- Serve immediately or store in an airtight container in the refrigerator for several days.
- This stuffing can be reheated in the oven or microwave.
Is there gluten in stuffing?
- Most stuffing is made with wheat bread which has gluten. Anyone following a gluten-free diet would not be able to have that.
How do you moisten stuffing?
- Add a few tablespoons of chicken broth or sometimes pouring some gravy over it will help.
How long do you re-heat the stuffing in the oven?
- Preheat oven to 350 degrees F., put the stuffing in a casserole dish and heat for about 15-30 minutes depending on how much stuffing you are heating up.
Recipe tips:
- Use a sturdy gluten-free bread. I used Schar white bread.
- Usually, dried out bread makes delicious stuffing. To do this, you can slice and chop the bread and leave it out at room temperature for a few hours. This is not necessary with this recipe.
- Substitute vegetable broth for chicken broth.
- You could use butter or ghee to replace olive oil, but it won’t be dairy-free.
- Store leftovers in an airtight container in the refrigerator.
- Serve with your favorite gravy dressing.
- Bake on the middle rack for even baking.

- 1 loaf gluten-free bread (I used Schar white bread for this recipe)
- 2 tbsp olive oil
- 1/2 onion chopped fine (1/2 cup)
- 2 celery ribs chopped fine (about 1 cup)
- 1 large garlic clove minced
- 1 tsp sea salt
- 2 large eggs whisked
- 2 cups chicken broth (I used low sodium.)
- 1 tbsp sage chopped
- 1 tbsp thyme chopped
- 1 teaspoon rosemary chopped

Preheat the oven to 350 degrees F.

Grease a baking casserole dish with about a tablespoon of olive oil. You could also use butter or ghee, but it won't be dairy-free.

In a saucepan, add the olive oil over medium-low heat. To this add the onions and celery and saute for about 5-7 minutes until softened and the onions are translucent. Be careful to not let the mixture get too browned.

To the saucepan, add the garlic clove, salt, and fresh herbs and heat for one minute more. Stir the mixture to combine.

Add cubed bread to a large mixing bowl.

To this, pour in the celery, onion mixture, the whisked eggs, and the chicken broth. Gently stir to combine with a spoon.

Scoop the contents of the mixing bowl into the greased baking dish and smooth the top.

Bake for 50- 60 minutes until the top is slightly golden and crunchy. Please note: all ovens differ so start checking at 40 minutes to make sure it does not over-bake.

Serve immediately.
