    Here is an easy, healthier chocolate fudge truffle recipe.  It is paleo,vegan and the main ingredients are: coconut manna, cacao powder, maple syrup, coconut flour and vanilla extract.  Mix everything in one bowl – it’s that easy.

    Paleo, Vegan, Coconut, Dark Chocolate Truffles - 24 Carrot KitchenThe hardest part is deciding which toppings to roll the truffles in!  I chose chopped nuts, unsweetened shredded coconut, raw, organic, cacao powder and melted chocolate coating.  Choose many toppings to make it easier! 🙂

    Here is an easy, decadent, fudgy, dairy free, paleo chocolate truffle recipe. Choose our toppings!
    Course: Dessert

    Ingredients
    • 1/4 cup coconut manna slightly melted
    • 1/4 cup cacao powder (I use raw organic cacao powder)
    • 1/4 cup water
    • 1 teaspoon vanilla extract
    • 1 tablespoon coconut flour
    • 1/8 cup maple syrup
    • cup Toppings: 1/2 total
    • 1/4 cup dark chocolate chips melted and add to this 1/2 teaspoon coconut oil
    • 1/4 cup total of other toppings chopped nuts, unsweetened shredded coconut, raw cacao powder are a few ideas.
    Instructions
    1. Prepare a medium sized plate with wax paper. This is where you will put the truffles after you have made them.
    2. In a bowl, mix coconut manna,cacao powder and vanilla extract until combined.
    3. Add water, maple syrup and coconut flour. Mix well.
    4. Place bowl (with chocolate mixture) in the refrigerator for about 20 minutes until chocolate mixture has hardened.
    5. Using a small ice cream scoop, scoop out balls of chocolate, pressing down into ice cream scoop to compact choc. mixture so it holds together the best.
    6. Make 10 chocolate truffles.
    7. Place plate of truffles back into the refrigerator.
    8. In small bowl, melt chocolate chips and add coconut oil. Mix to combine.
    9. In other small bowls, add other toppings you prefer. This makes it easier to roll your truffles with toppings.
    10. Very gently roll chocolate truffles in toppings. It is easiest to use a toothpick (by sticking toothpick into truffle to hold it), especially with the melted chocolate coating. Using toothpick, drizzle chocolate coating over truffle with a spoon, twirl to drip off excess chocolate coating. Place coated truffles back on wax paper. Once all are done, put back in the refrigerator to harden (about 30 minutes).
    11. Can be served immediately or saved for later. Keep in airtight container in fridge.
    12. Enjoy!
