This recipe for Oven Roasted Sweet Potato Wedges has only five ingredients and makes a wonderful side dish to many meals. Sweet potatoes are incredibly nutritious and are packed with anti-oxidants, vitamins and minerals.
During a recent grocery store visit, I noticed in the prepared food section, sweet potato wedges very similar to these for $6.99 per pound! Make your own and they will cost less and taste just as good or better. I buy organic sweet potatoes and they are usually $1.99 – $2.49 per pound.
It only takes a few minutes prep for these sweet potato wedges. They don’t get crispy and crunchy; the texture is very soft, like “buttah”. Delish!

- 2 in large sweet potatoes washed and cut wedges.
- 1 tablespoon olive oil
- Pinch sea salt and pepper.
- 1/2 teaspoon smoked paprika

Preheat oven to 400 degrees F.

Prepare a baking sheet with parchment paper.

Place wedges in a medium sized bowl.

To the bowl, add one tablespoon olive oil, pinch of sea salt and pepper and 1/2 teaspoon smoked paprika. Toss with your hands to combine and to coat all the sweet potatoes with the spice mixture.

Roast sweet potatoes for 35-45 minutes, until soft and slightly browning at edges.

Serve hot.

Notes: These sweet potato wedges will not get very "crispy". They remain soft and a knife will slice them like "buttah". So good!
