You know what I love more than banana bread? A banana bread with streusel topping! This grain, gluten, and dairy free banana bread is jam-packed with healthy ingredients. And, it could not be easier to make. As it cools, the streusel topping gets crusty and hard, just the way I like it. Some ways you can enjoy this bread: breakfast, as a snack, and even as a dessert. I would even have this with some coconut cream whipped cream. It goes perfectly with some ghee and jam and your favorite cup of tea.
When baking, due to oven temperatures varying, keep an eye on it, and when a toothpick comes out clean, it should be done.
I used ripe bananas; bananas with a few blackish spots, but not too ripe. I recently read that placing the plastic wrap around the stems are supposed to keep them fresh longer. Anyone hear that and does it work?
Try these Coconut Flour Banana Chocolate Chip Muffins.
- 3-4 cups ripe bananas 2 and 1/2 total mashed (# depends on size). Easiest way to mash: place in electric mixer.
- 4 large eggs
- 1/2 cup almond butter
- 1/4 cup coconut oil
- 1/2 cup coconut flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Streusel Topping:
- Whisk together:
- 1/4 cup almond flour
- 1/4 cup coconut oil
- 1 teaspoon ground cinnamon
- 1 tablespoon chopped pecans
- 1 teaspoon vanilla extract
- pinch sea salt

Preheat oven to 350 degrees F.

Prepare an 8x4 loaf pan by spraying with oil (my preferred: coconut oil), then lining with parchment paper.

Place the bananas in an electric mixer and mash. Take the mixture out and measure 2 1/2 cups. Place back in mixer.

Add all the other ingredients to mixer and blend until combined.

Pour into prepared 8 x 4 loaf pan. Spread streusel topping over the top.

Bake for 50-60 minutes, when toothpick comes out clean.

Cool and then slice and serve.

I’ve tried the plastic wrap thing — it kept them from getting brown, but the inside of the bananas were still getting riper and riper. I went to peel a beautifully yellow banana, and the peel just fell off and I had a very mushy banana on the inside. This bread looks great! I’m a sucker for a sweet quick bread and I just love a streuselly top
