Bake or microwave a Japanese purple sweet potato. Scoop out the cooked sweet potato and put in a bowl.
In a mixing add the sweet potato, almond butter, maple syrup and sea salt (to taste). Mix until combined.
If you like the texture of the vegan cookie dough, you don't have to add coconut flour. However, if it is sticky, you can add coconut flour. Add 1-2 tablespoons of coconut flour to get the desired consistency.
Add the chocolate chips and mix well.
