Vegan Cookie Dough

Recipe for creamy, delicious vegan cookie dough that is simple and healthier!  Grain-free, gluten-free, dairy-free, Paleo, oil-free and egg-free!  You'll never know there is a healthy vegetable as the main ingredient!

Ingredients

  • 1 cup cooked Japanese purple sweet potato (this is the sweet potato that has a purple skin and white interior flesh)
  • 1/2 cup smooth almond butter
  • 2 tbsp maple syrup
  • pinch sea salt
  • 2 tbsp organic coconut flour
  • 2 tbsp dairy-free chocolate chips

Instructions

  1. Bake or microwave a Japanese purple sweet potato.  Scoop out the cooked sweet potato and put in a bowl.

  2. In a mixing add the sweet potato, almond butter, maple syrup and sea salt (to taste).   Mix until combined.

  3. If you like the texture of the vegan cookie dough, you don't have to add coconut flour.  However, if it is sticky, you can add coconut flour. Add 1-2 tablespoons of coconut flour to get the desired consistency.  

  4. Add the chocolate chips and mix well.

Recipe Notes

Can I Bake This Healthy Cookie Dough?

  • Yes!  The short answer - I simply add a teaspoon of baking soda to the dough, and make "blondies" by forming a square shape on a parchment lined baking sheet and bake for 25-30 minutes at 350 degrees F.  (Hope to have a detailed post soon).  Tip:  I usually leave out the coconut flour if I intend to bake this and make blondies or cookies.

How Long Does Vegan Cookie Dough Last?

  • Well, in my house a day or two, but should last up to a week stored in the refrigerator.

Vegan Cookie Dough For One:

  • Simply cut the recipe in half!

Can You Freeze Vegan Cookie Dough?

  • Yes!  Place in the fridge to let it thaw.  You can freeze the cookie dough balls also!

Variations On This Healthy Cookie Dough Recipe:

  • Add 2 tablespoons of raw organic cacao powder for chocolate vegan cookie dough!

  • Chocolate dipped vegan cookie dough balls.  (see below).

Pro Tips:

  • For best results use a Japanese sweet potato (purple exterior, white interior) for its mild taste.  You can use any sweet potato, but it will have a stronger flavor.
  • Bake or microwave the Japanese sweet potato to fully cook.  You are using the white flesh. ( 99% of the time I microwave my sweet potato for this recipe).
  • Use store-bought creamy almond butter or make homemade almond butter.
  • Substitute cashew butter is almond butter is not available.
