Ingredients

  • 1/4 cup pitted dates (about 4)
  • 1 1/2 cups fire roasted diced tomatoes (one 14 ounce can)
  • 6 ounces organic tomato paste (one can)
  • 1 tbsp coconut vinegar (sub apple cider vinegar)
  • 1 teaspoon dried chives (sub onion powder)
  • 1/2 teaspoon garlic powder (sub garlic infused oil for low fodmap)
  • 1 teaspoon salt
  • pinch smoked paprika (optional, to taste)

Instructions

  1. Place dates in a bowl and pour boiling water over them.  Set aside for 10 minutes.  After 10 minutes, drain the water.

  2. Pour the rest of the ingredients into a food processor and blend for a minute or two until creamy.

  3. Add the dates and blend again until creamy and the desired texture.

  4. Store in the refrigerator in an airtight container for up to 10 days.
