Mashed Sweet Potatoes!

Easy mashed sweet potatoes are creamy and delicious!  A great side dish to many entrees, mashed sweet potatoes are perfect for holidays or everyday occasions.

These sweet potatoes are naturally gluten-free and grain-free and by using dairy-free milk are dairy-free as well.

Ingredients

  • 5 sweet potatoes (about 3 pounds)
  • 1/2 cup milk (I use coconut milk, refrigerated version in a carton).
  • 1/2 teaspoon sea salt
  • 1/4 cup maple syrup (optional)

Instructions

  1. Cook the sweet potatoes using one of the methods in the post. Bake or boil.

  2. Once the sweet potatoes are cooked, let them cool. Scoop sweet potato meat out of the baked version. Discard the skins.

  3. Place the sweet potatoes and additional ingredients an electric food processor or blender. You could also use an electric mixer fitted with the whisk attachment. 

  4. Blend the mixture for a few minutes until the mixture is smooth and creamy. Check for seasonings and add them as needed.

  5. This dish is the perfect side dish for the holidays or any meal.

  6. Store in an airtight container for up to a week.
