Cauliflower Crust Pizza

This is a healthier pizza using cauliflower instead of flour in the crust.

Ingredients

  • 2 1/2 cups grated cauliflower about 1/2 large head
  • 1 large egg
  • 1 cups and 1/2 part skim mozzarella
  • 2 tablespoons grated parmesan
  • salt and pepper
  • Jarred tomato sauce

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray non stick spray on a pizza pan or line a pizza pan with parchment paper.
  3. Place grated cauliflower crumbles in a microwavable bowl and microwave for about 5 minutes.
  4. Remove and let cool.
  5. In a large bowl, mix the egg, 1 cup mozzarella, 1 tablespoon parmesan, and pinch of salt and pepper. Once combined, smooth out into a 10 inch round (pizza shape) on the prepared pizza pan. Spray the cauliflower "dough" lightly with the non stick spray and bake for 10-15 minutes, until lightly golden.
  6. Take out of the oven and spread some tomato sauce around the cauliflower "dough" and next spread some mozzarella and then parmesan cheese over the top.
  7. Bake in the oven until cheese is melted and bubbly, about 10 minutes. Optional: top with fresh chopped basil and then serve.
