This Cobb Salad includes the traditional ingredients of grilled chicken, avocado, tomato, bacon, and more! The grilled chicken adds a touch of summer. In a glass jar, add all the ingredients for the dressing, vinegar, dijon mustard, sweetener, salt and pepper. Whisk the ingredients together or place a lid on the jar and shake well. Set aside.
To grill the chicken, rub the chicken breasts with olive oil, salt and pepper and cook until the internal temperature reaches 165 degrees. Once done, let the chicken rest by placing a sheet of aluminum foil over it for 15 minutes. Then slice for the salad.
Spread the lettuce on a large platter. Then add all the other ingredients. Finish by sprinkling with finely chopped herbs if desired.
Just prior to serving, pour the dressing over the salad and serve.
