Grilled Chicken Cobb Salad

This Cobb Salad includes the traditional ingredients of grilled chicken, avocado, tomato, bacon, and more!  The grilled chicken adds a touch of summer. There are several reasons to love this salad: can be made ahead of time, assembles in minutes, and is a complete healthy meal!  It's easy to swap out ingredients per your preference. And it's grain, gluten, and dairy-free!

Ingredients

  • 2 tablespoons olive oil (to grill the chicken)
  • 1 pound boneless skinless chicken breast, grilled and sliced.
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, cut in half
  • 4 hard-boiled eggs, peeled and quartered
  • 6 slices bacon, cooked and cut into pieces
  • 1 avocado, sliced
  • 1 red onion, sliced
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons vinegar (may use red wine or white)
  • 2 teaspoons dijon mustard
  • 2 teaspoons honey (may substitute maple syrup)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a glass jar, add all the ingredients for the dressing, vinegar, dijon mustard, sweetener, salt and pepper. Whisk the ingredients together or place a lid on the jar and shake well. Set aside.

  2. To grill the chicken, rub the chicken breasts with olive oil, salt and pepper and cook until the internal temperature reaches 165 degrees. Once done, let the chicken rest by placing a sheet of aluminum foil over it for 15 minutes. Then slice for the salad.

  3. Spread the lettuce on a large platter. Then add all the other ingredients. Finish by sprinkling with finely chopped herbs if desired.

  4. Just prior to serving, pour the dressing over the salad and serve.

Recipe Tips:

  • Make all the ingredients ahead of time for easy assembly, including the salad dressing.
  • Double the recipe for a large crowd and serve on a platter.
