Simple Paleo Pumpkin Bars That Are Irresistible!

These Paleo Pumpkin Bars are grain, gluten and dairy free!

  • 3/4 cup creamy almond butter
  • 1/2 cup organic pumpkin puree
  • 1 organic large egg
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/8 cup maple syrup
  • pinch fine sea salt
  • 1/8 cup mini chocolate chips plus 1 tablespoons additional for sprinkling on top before baking.


  1. Preheat oven to 350 degrees F.
  2. Prepare a pan by spraying with oil (I used a glass baking dish and coconut oil spray). I use a Corningware 6 1/2 x 6 1/2 square pan.  You could use an 8 x 8 pan, but the bars would not be as thick and baking time may need to be adjusted.

  3. In medium size mixing bowl, whisk egg.
  4. Add the rest of the ingredients and mix well with a spoon.
  5. Pour batter into pan, sprinkle top with additional chocolate chips.
  6. Bake for 20-25 minutes, until a toothpick inserted in center, comes out clean and the top of the bars is lightly golden brown.
  7. Enjoy!
