Kale Salad Dressing!

This delicious kale salad dressing is the ultimate dairy-free, gluten-free way to dress your kale! Using fresh ingredients, like fresh lemon juice and garlic really brightens and heightens the flavor of your salad.

Lots of tips, substitutions, and a vegan version also.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1/4 cup honey (use maple syrup for vegan)
  • 1 garlic clove (minced)
  • 1/8 teaspoon sea salt

Instructions

  1. Gather and measure the ingredients.

  2. Place all the ingredients in a blender and blend for a minute. The dressing will emulsify by blending.

  3. Pour dressing over massaged kale salad.

  4. Place in a glass jar or other airtight container.

Recipe Tips:

  • Use a blender or a small food processor to blend the dressing together (so it emulsifies).
  • Use freshly squeezed lemon juice.
  • Massage kale before putting kale salad dressing on it.

How long will a dressed kale salad last?

  • You can expect a kale salad to last several days (up to 5) in an airtight container in the refrigerator.

How do you prepare raw kale?

  • Slice the kale into 1/4-inch thin ribbons (discard the ribs). Place the kale in a large bowl and massage the kale with your hands to tenderize it for about 3-4 minutes until the kale softens and. Toss the salad with the kale salad dressing.

How do you massage kale?

  • After you slice the kale and put it into a mixing or salad bowl, use your hands to massage the kale for several minutes.  Gently squeeze the kale pieces in your hands for about 3 minutes, similar to how you would knead dough.  You can add the dressing and do this or do this before adding the dressing.

Which kale is best for a salad?

  • I like Lacinato, which is also called Dino (dinosaur) and Tuscan because of it's mild flavor, soft and pliable texture.  I especially like this kale for a salad since you are eating it raw.  It has a milder flavor than curly kale.
