Chia Seed Pudding

Easy four-ingredient chia pudding that is creamy smooth, dairy-free and no refined sugar.  Five minutes prep is all it takes!

A delicious and simple breakfast or healthy snack!

Ingredients

  • 1 1/2 cups unsweetened almond milk
  • 1 tbsp maple syrup
  • 1/3 cup chia seeds
  • 1/2 tsp vanilla extract
  • pinch sea salt

Instructions

  1. Gather and measure the ingredients.

  2. Add all ingredients except the chia seeds to the blender.

  3. Blend for about 30 seconds and then add the chia seeds.

  4. Blend for about one minute until creamy pudding consistency.

  5. Place chia seed pudding into an airtight container in the refrigerator for at least an hour to thicken.

  6. For overnight chia pudding, spoon the pudding into jars with lids.

  • A few days in an airtight container in the refrigerator.

  • This chia seed pudding should thicken in the refrigerator, but should you could always add a bit more chia seeds and re-blend.

  • I store my flax and chia seeds in the refrigerator to keep fresh and keep from going rancid quickly.

Can I freeze my chia pudding?

  • Yes, pour the chia pudding into ice cube trays and freeze for later use.

Tips and Techniques:

  • Add toppings to your chia pudding, preferably right before you eat.
  • Suggested toppings:  berries, chopped nuts, coconut milk whipped cream, sliced fruit, dairy-free ganache, mini-chocolate chips, dried coconut flakes, etc...
