The BEST Paleo Waffles (Grain-free, gluten-free, dairy-free)!

The most delicious Paleo waffles that are grain, gluten and dairy-free!  Crispy exteriors with a pillowy soft interior, kid-friendly, freezer-friendly, refined sugar-free.  Great for breakfast, brunch and also are delicious with avocado mash or even almond butter and jam!  Top with your favorite - maple syrup, warmed honey, berries, fresh fruit, coconut whipped cream!

Ingredients

  • 1 1/4 cups blanched almond flour
  • 1/2 cup tapioca flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 large egg (try to have at room temperature)
  • 1/4 cup banana puree
  • 1/3 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon lemon juice

Instructions

  1. Gather and measure ingredients.  Preheat waffle pan.

  2. In a medium-sized mixing bowl, add the dry ingredients and whisk/mix well removing all lumps.

  3. In a large mixing bowl, add all the wet ingredients and whisk/mix well.

  4. Pour the dry ingredients into the wet ingredients and mix well with a spoon.

  5. Scoop waffle batter into the heated waffle maker per manufacturer's instructions.

  6. Serve right away or to freeze, place cooled waffles in a ziplock baggie in the freezer and heat up via toaster or toaster oven.

Recipe Notes

Tips When Making Paleo Waffles:

  • Try adding some fresh blueberries or mini chocolate chips for a special treat.
  • For extra-crisp, pop the waffle into the toaster oven for a minute or two.
  • Great served with some warm maple syrup or raw honey, or fresh fruit such as berries and bananas.
  • Top with eggs (scrambled, poached, etc...), avocado mash, guacamole, sauteed mushrooms, almond butter, and jam.  Lots of ideas!
  • Great served along with a Whole30 Sausage.
  • I like to use two waffles as a sandwich with my Whole30 chicken salad as the filling.
  • Make a double or triple batch and freeze for later.  Simply heat up the waffle in the toaster or toaster oven.
