Chocolate Chip Blondies

If you love brownies and cookies, then you'll love these chocolate chip blondies!  Super easy to make, delicious and the perfect treat for entertaining.

Ingredients

  • 1 cup All purpose flour (to make gluten-free use gf flour. see notes)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/3 cup coconut sugar (or regular cane sugar)
  • 1/2 cup butter, softened (1 stick butter)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 3/4 cup semisweet chocolate chips
  • 1/3 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350 degrees. Line an 8 x 8 baking pan with parchment paper.

  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.

  3. Using an electric mixer, mix butter and sugars until well blended. Add vanilla and egg and beat for one minute.

  4. Add flour mixture to mixer ingredients and blend until just blended. Beat until just blended. Do not overmix. Stir in chocolate chips and pecans.

  5. Spoon batter into the prepared pan and press down and smooth batter into pan.

  6. Bake for 20-25 minutes until a toothpick comes out clean and top is firm. Let cool for 15 minutes, then slice and serve or place in airtight container at room temperture for a few days, or in the refrigerator for up to one week Store in the freezer for up to a month.

Recipe Notes

Tips and techniques:

  • Try to have all ingredients at room temperature when you start making this recipe.
  • To make these blondies gluten-free, substitute a gluten-free flour.  I used Trader Joe's GF flour and it worked great.
  • Dark brown sugar has more molasses than light brown sugar.  If you prefer a lighter flavor choose light brown sugar.
  • To keep the parchment paper in place in the pan spray the pan with a little oil or add a drop of oil to the bottom of the pan prior to putting the parchment paper in.
  • For extra fun, top your blondies with ice cream, hot fudge sauce, whipped cream, chocolate chips.

What is the difference between a blondie and a brownie?

  • Brownies are chocolate flavor using cocoa powder or melted chocolate.
  • Blondies use brown sugar and brownies usually do not.

Do you put blondies in the fridge?

  • Yes, you can store blondies in an airtight container in the refrigerator for up to a week, at room temperature for a few days, or freeze for several months.

How do you know the blondies are done?

  • You'll know the blondies are done when the center is set, the edges turn slightly golden and pull away from the edge of the pan.
