Cinnamon Iced Coffee

A delightful, easy, healthier iced coffee drink.

Ingredients

  • cups One and one half strong brewed coffee I use organic
  • 1/3 cup coconut milk (canned I used "light" for this coffee)
  • inch One piece of vanilla bean I cut from the whole bean
  • 1/8 teaspoon ground cinnamon or more to your taste
  • 1/4 teaspoon Stevia You could sub sweetener of your choice. I used NuNaturals powdered

Instructions

  1. Place brewed coffee in a large jar (or bowl)
  2. Add coconut milk (Using canned coconut milk, stir it up with a spoon mixing the "cream" and coconut water together to make creamy milk)
  3. Add vanilla bean (open the bean, scrape the inside "paste" and place this plus the bean in the glass jar with coffee)
  4. Add cinnamon and stir the mixture well.
  5. Place in the frig for about 30 minutes until cool.
  6. Add Stevia and mix well.
  7. Fill a glass or glass jar with ice.
  8. Fish out the piece of vanilla bean in the coffee mixture and discard.
  9. Pour coffee mixture over the ice, add a straw and enjoy!
  10. Note: This usually makes about 1 - 2 servings for me. Save some for later!
