Chocolate coconut ice cream is creamy and delicious dairy-free ice cream! Just a few ingredients are needed for this vegan ice cream!
Place the chocolate chips in a small heatproof bowl. Set aside.
Place the coconut milk in a small pot over medium-low heat. Heat this mixture until warm, but not boiling.
Pour the heated coconut milk over chocolate chips, as chips melt, whisk to combine coconut milk and chocolate. Add the vanilla extract and stir to combine. It may take several minutes to fully incorporate.
Cover chocolate mixture and place in the fridge for several hours or overnight. You want this mixture to get really cold before putting in the ice cream maker.
Once cold, put the chocolate mixture in ice cream maker and follow the manufacturer's directions.
Mine takes about 10-12 minutes in the ice cream maker to become rich and creamy. You can eat as is and it will be like soft serve. Or, for harder, scoopable ice cream, place mixture in the freezer (in a covered bowl) for a few hours.
Optional - for chocolate chip ice cream add 1/8 - 1/4 mini chocolate chips.
