Meyer Lemon Pudding Cakes

A delicious, refreshing dessert custard pudding cake. I have topped mine in the photo with coconut whipped cream. For best results, use Meyer lemons.

Ingredients

  • 4 large organic eggs (separated)
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup meyer lemon juice (and zest from one meyer lemon)
  • 3 tablespoons coconut flour
  • pinch sea salt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place 6 ramekins on a baking sheet and spray ramekins lightly with spray oil (I use coconut oil).
  3. Using an electric mixer, whip egg whites until frothy with soft peaks.  (Set aside frothy egg whites to be added later in the recipe.)

  4. In a new, separate mixing bowl, place zest, lemon juice, yolks, coconut milk, maple syrup and vanilla extract and whisk until fully incorporated.

  5. To this mixing bowl, add coconut flour, salt, and mix until combined.

  6. Next, add whipped egg whites and gently incorporate by folding until fully combined.

  7. Pour mixture into the ramekins (or can use a small glass baking dish) filling almost to top.

  8. Bake for 20-25 minutes until pudding cups are just slightly browned on top and filling is set.
  9. Cool and then top with coconut milk whipped cream to serve.
  10. Notes: I have also made this pudding by using one larger glass baking dish or a few larger baking dishes and scooping out portions. It works just as well. I have shown an example in the photos.

    I have made this recipe using 3 extra large eggs (instead of 4 regular eggs) and it worked well.
