Parsnip Fries

A delicious, easy alternative to potato french fries. Serve as a side to burgers, entrees or with your favorite dipping sauce.

Ingredients

  • pound One parsnips. I bought a one pound bag that had about 4 large parsnips.
  • 2 tablespoons olive oil I used extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Preheat oven to 400 degrees F. and line a baking sheet pan with parchment paper.
  2. Peel and slice parsnips into french fry like pieces.
  3. In a medium sized bowl add the sliced parsnips. To this, add the olive oil, salt and pepper and toss the coating with the parsnips, mixing well.
  4. Place parsnips on the baking sheet in rows and if possible so they are not touching (like example photo).
  5. Bake for 25-35 minutes until browned.
  6. Serve and enjoy!
