Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Toss the chopped sweet potatoes in 2 tablespoons of the olive oil to coat well, add half the salt and pepper and roast in the oven for about 30 minutes until cooked through.
Meanwhile, add the other 2 tablespoons olive oil to a cast-iron skillet and heat to medium.
Add the chopped onions, garlic, and red peppers, additional salt, and pepper. Saute until tender.
Add the roasted sweet potatoes to the cast iron skillet and add the smoked paprika and cook and stir together for a few minutes.
Turn the heat off and add the chopped parsley and stir to combine.
Serve immediately as a side dish or can be stored in an airtight container in the refrigerator and heated up later.
