Ingredients

  • 2 Medium-sized Apples (peeled and sliced)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon freshly squeezed orange juice
  • 1 teaspoon ground cinnamon (I like Ceylon cinnamon)
  • 1/4 teaspoon fine sea salt
  • 1/2 cup chopped nuts of your choice ( I used almonds, walnuts and pecans)
  • 1 tablespoon almond flour
  • 1 tablespoon tapioca flour/starch
  • 1 teaspoon vanilla extract
  • 1/8 cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray a glass casserole dish with oil spray (I use coconut oil)
  3. Peel and slice apples and place in a large mixing bowl.

  4. To the apples, add the lemon juice, orange juice, cinnamon, and sea salt. Toss with a spoon to combine.

  5. Spread the apple mixture in the prepared casserole baking dish. Set aside.

  6. In a medium-sized mixing bowl, combine the topping ingredients. Stir to combine well.

  7. Spread topping over the top of the apples and place in a preheated oven.

  8. Bake, uncovered, for 30 minutes or until apples are tender and cooked through.
  9. Add your favorite non-dairy topping; ice cream or coconut whipped cream are great choices!
