Gluten-Free Stuffing!

A gluten-free stuffing that is golden brown, crispy, and perfect for the holiday table

Just a few easy ingredients for this bread stuffing, fresh herbs for the ultimate flavor, this savory stuffing dish is naturally dairy-free.

Ingredients

  • 1 loaf gluten-free bread (I used Schar white bread for this recipe)
  • 2 tbsp olive oil
  • 1/2 onion chopped fine (1/2 cup)
  • 2 celery ribs chopped fine (about 1 cup)
  • 1 large garlic clove minced
  • 1 tsp sea salt
  • 2 large eggs whisked
  • 2 cups chicken broth (I used low sodium.)
  • 1 tbsp sage chopped
  • 1 tbsp thyme chopped
  • 1 teaspoon rosemary chopped

Instructions

  1. Gather and measure the ingredients.

  2. Preheat the oven to 350 degrees F.

  3. Grease a baking casserole dish with about a tablespoon of olive oil. You could also use butter or ghee, but it won't be dairy-free.

  4. In a saucepan, add the olive oil over medium-low heat. To this add the onions and celery and saute for about 5-7 minutes until softened and the onions are translucent. Be careful to not let the mixture get too browned.

  5. To the saucepan, add the garlic clove, salt, and fresh herbs and heat for one minute more. Stir the mixture to combine.

  6. Add cubed bread to a large mixing bowl.

  7. To this, pour in the celery, onion mixture, the whisked eggs, and the chicken broth. Gently stir to combine with a spoon.

  8. Scoop the contents of the mixing bowl into the greased baking dish and smooth the top.

  9. Bake for 50- 60 minutes until the top is slightly golden and crunchy. Please note: all ovens differ so start checking at 40 minutes to make sure it does not over-bake.

  10. Serve immediately.

  11. Simply store leftovers in the refrigerator in an airtight container and reheat as you desire.

Recipe Notes

Recipe tips:

  • Use a sturdy gluten-free bread.  I used Schar white bread.
  • Usually, dried out bread makes delicious stuffing.  To do this, you can slice and chop the bread and leave it out at room temperature for a few hours.  This is not necessary with this recipe.
  • Substitute vegetable broth for chicken broth.
  • You could use butter or ghee to replace olive oil, but it won't be dairy-free.
  • Store leftovers in an airtight container in the refrigerator.
  • Serve with your favorite gravy dressing.
  • Bake on the middle rack for even baking.

  • Cooked chopped sausage
  • Dried cranberries (or any dried fruit you like such as raisins, cherries, apricots)
  • Chopped pecans (or any nuts you like)
  • Chopped apple cubes
  • Cooked chopped bacon
