The disappearing Paleo Pumpkin Bars are easy to make and have the benefit of healthier ingredients. If you are a fan of one bowl recipes that make your house smell like fall, pumpkin spice, and your favorite bakery all rolled in one, this recipe is for you!
Ingredients For Making Your Paleo Pumpkin Bars:
- creamy almond butter
- organic pumpkin puree
- maple syrup
- pumpkin pie spice
- organic egg
- baking soda
- fine sea salt
- mini chocolate chips
Below is a photo of the Paleo Pumpkin Chocolate Chip Bars ready for the oven. I used a Corningware pan (measures 6 1/2 x 6 1/2) that I’ve had for a while (it might be vintage) and that I love for small batches of brownies and blondies. A standard, 8 x 5 loaf pan would likely work just as well.

Pumpkin is considered an immune system booster superfood and is a great source of vitamins (in particular Vitamin A), minerals, and fiber. Additionally, it is rich in fiber, beta-carotene and can help with glucose levels.

How I love my rescue dog. I lucked out with a sweet basset hound beagle mix (a bagel!). Poor thing, he gets upset stomach quite often. Adding a scoop of organic pumpkin puree (not pumpkin pie mix) seems to settle his stomach. And, this probiotic is a great find as well. There are only a few brands he will eat without the trickery of trying to bury in the food.
The probiotic tablet gets put on the top of his food in his dish. It’s fun to watch as he carefully sticks out his tongue to snatch the probiotic before eating his food. He expects quickness too! After I pour his food, he sits and waits and gives me a look “are you forgetting something”? Oh yeah, the probiotic tablet! He loves his probiotics!

These Paleo Pumpkin Bars are delicious, slightly sweet with a subtle hint of pumpkin. Although usually considered a dessert, they would make a quick and easy breakfast bar. You might find you often have all the ingredients on hand so they can be anytime. Perfect for holidays, weekend mornings, or a great afternoon snack.

These Paleo Pumpkin Bars are grain, gluten and dairy free!
- 3/4 cup creamy almond butter
- 1/2 cup organic pumpkin puree
- 1 organic large egg
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/8 cup maple syrup
- pinch fine sea salt
- 1/8 cup mini chocolate chips plus 1 tablespoons additional for sprinkling on top before baking.

Preheat oven to 350 degrees F.

Prepare a pan by spraying with oil (I used a glass baking dish and coconut oil spray). I use a Corningware 6 1/2 x 6 1/2 square pan. You could use an 8 x 8 pan, but the bars would not be as thick and baking time may need to be adjusted.

In medium size mixing bowl, whisk egg.

Add the rest of the ingredients and mix well with a spoon.

Pour batter into pan, sprinkle top with additional chocolate chips.

Bake for 20-25 minutes, until a toothpick inserted in center, comes out clean and the top of the bars is lightly golden brown.
