Can you believe it is almost August? Whoa, this summer is flying. Being a “list” person, I usually have a list of things I want to do, accomplish, and places I want to go during the summer. For example, one of the things on my list this year was to go to Block Island, as I had never been before. Luckily, I made a fourth of July trip to Block Island and, which, I can report, ended up being a fun excursion. What a beautiful place! If you have thought about going there, I recommend it highly. There is more to do than I imagined. My favorite part was renting a bike and cruising around the island. Next time I want to try the Vespas. So much fun! And I wasn’t sore the next day, even though I haven’t ridden a bike in ages. 🙂
I love that the summer is less scheduled, more easy going, less of a routine than the rest of the year. It just seems to go by so fast! 🙂
Of course, summer adventures remind me of delicious ice cream. This Chocolate Chip Almond Banana Ice Cream is an updated version of a previous recipe on the blog. This one just uses almond butter instead of another nut butter. In the photos above, I feature the banana ice cream freshly whipped, looking and tasting like a soft serve ice cream (my favorite version). If you place it in the freezer, it will harden and be a little more scoop-able.

Favorite products used in this recipe:
- 2 in bananas frozen (remove peel and freeze the banana, easiest way is to put a plastic storage bag and seal for a few hours until frozen).
- 2 tablespoons almond butter
- 1-2 tablespoons chocolate chips I used Enjoy Life brand
Remove the banana from freezer.
Cut the frozen bananas into coin sized pieces. Some people cut the banana into coin sized pieces BEFORE freezing. That's an option too.
Place the banana pieces in a small food processor and blend until the banana goes from small chunks to smooth like soft serve ice cream. This may take several minutes.
Add the almond butter and process again until incorporated.
Last, add the chocolate chips and mix with a spoon until well incorporated.
Serve immediately or store in freezer for later.
